Precision fermentation startup Melazyme raises $2 million

In Tennessee, precision fermentation startup Melazyme has raised $2 million in a seed funding round to support platform development and production scale-up of high-value molecules like melanin and brazzein.

The company was founded in 2025 by Perumal Gandhi and Bonney Oommen, two veterans of cultivated dairy protein firm Perfect Day. Melanin has applications across cosmetics and UV protection, functional coatings and advanced materials, and filtration and environmental remediation, while brazzein is a sweet protein.

The seed round was led by SeaX Ventures with participation from Stellaris Venture Partners and Plug and Play Ventures.

“Perumal and Bonney bring rare experience building and scaling precision fermentation companies,” Kid Parchariyanon, managing partner of SeaX Ventures, told Green Queen. “Melazyme is targeting molecules where fermentation delivers immediate, differentiated value – and a platform whose application space extends well beyond any single market.”
