In Denmark, Novozymes is seeing a growth in artisanal and high quality bread demand from consumers, similar to the craft beer industry, and is investing money in R&D to improve enyzmes for bread production. With consumers no longer as concerned about bread lasting as long as possible, but preferring a fresh tasting bread that just came out of the oven, Novozymes sees its enyzmes as playing a big role in being able to deliver that freshness to consumers. In fact, they also are working on making breads healthier as more and more consumers are aware of the role food plays in our health. Novozymes currently spends about 13% of its budget on R&D to work on projects like these.
