Food science thrives in the Garden State

In New Jersey, Nestlé recent decision to site its health science research within the state’s bioscience corridor demonstrates the region’s competence in food innovation.

According to Business Facilities magazine, Mondelēz, Pinnacle Food Group, and Unilever also have food science centers in New Jersey. Flavor and fragrance majors Firmenich, Symrise, and International Flavors & Fragrances also have a research presence in New Jersey. New Jersey is also home to 1,900 food manufacturing companies, including Campbell Soup, Mars and Goya.

Life science incubators are also playing a role. For example, Chromocell Corporation was founded in North Brunswick, NJ by two researchers who discovered a process to block pain. The resulting technology, it turns out, can also increase the perception of sweetness and saltiness.

New Jersey is also home to Peterson Restoration Corporation, which is working to launch a Food Business Incubator. It will offer a USDA/FDA-certified kitchen and a demo test kitchen.
