Nestlé begins piloting animal-free dairy proteins

In Switzerland, food and beverage giant Nestlé will begin piloting production of animal-free dairy proteins at a recently inaugurated R&D Accelerator. Using precision fermentation technology developed by California’s Perfect Day, the proteins are identical to whey found in cow’s milk but are more environmentally friendly to produce. 

“As the world’s largest food and beverage company, delivering foods and beverages that are good for people and the planet is a priority,” says Heike Steiling, Head of Nestlé’s Development Center for dairy products, in a press statement. “We are exploring emerging technologies that can lead to animal-friendly alternatives that are nutritious and sustainable, without compromising on taste, flavor, and texture.”

Nestlé’s R&D Accelerators were designed to bring products from concept to market testing in just 6 months.
