Solar Foods and Ajinomoto unveil mooncakes from air

In Singapore, food giant Ajinomoto has introduced mooncakes and ice cream sandwiches featuring proteins produced using fermentation and carbon dioxide as feedstock.

Dubbed Solein, the proteins are manufactured by Solar Foods and replace dairy in the Traditional Flowering Mooncakes and Ice Cream Sandwiches. Ajinomoto plans to sell the two products for a limited time under its new Atlr.72 brand. Availability has been timed to coincide with Singapore’s Mid-Autumn Festival, an event in which mooncakes are a traditional gift to friends and family.
