Swiss startup Nectariss recreates bougie fungi with fermentation

In Switzerland, a startup is recreating the intensely umami flavor of truffles, a pricey fungi that is impossible to cultivate and so difficult to find specially trained dogs and pigs are required.

Founded by professor and truffle expert Richard Splivallo, Nectariss is using fermentation to produce its truffle oil, which it sells under the brand name NBROSIA. According to vegconomist, its range includes white, black, and burgundy truffle oils.

“With our technology, we can release the aromatic potential of truffles through fermentation and thus supply the market with authentic truffle flavors the whole year round… Our customers shall enjoy authentic truffle flavors while, similarly to wine, learning about flavor differences among truffle sorts,” Splivallo says.
