Israeli firm raises $4.1 million for natural food coloring technology

In Israel, plant-based food coloring firm Phytolon has raised $4.1 million to advance products to market and support collaborations with potential clients.

Founded in 2018 by Halim Jubran and Tal Zeltzer—now CEO and CTO—Phytolon uses technology licensed from Weizmann Institute of Science.

Investors include Millennium Food-Tech, EIT Food, Trendlines Group, former CEO of Elbit Systems Yossi Ackerman, and the Israel Innovation Authority.

“Phytolon’s success provides an excellent example of how cutting-edge, basic science sets the stage for novel applications in the industry,” Weizmann Institute professor Asaph Aharoni tells Israel Hayom. “Phytolon’s product is a step forward towards reducing the segment of synthetic chemistry and increasing sustainability of natural resources for the food industry.”
