Kimchi waste could become viable feedstock for bioplastics

In South Korea, researchers at World Institute of Kimchi have converted kimchi radish waste into a bioplastic. Specifically, the team used an E. coli bacteria with the ability to convert certain chemicals in kimchi-processing leftovers into a bioplastic. 

The research used advanced modeling to streamline the development of low-waste manufacturing processes. By integrating biological data with a genome-scale model, the team developed an approach that could be applied to engineer microbes to convert a broader range of agricultural by-products, extending beyond kimchi-radish waste.

South Korea generates approximately 18,700 of kimchi waste material. Over 90% of these leftovers end up in waste-treatment facilities.
